While learning the arduous and meticulous process of brewing sake at Asamai Shuzo in Akita, Taikai Shuzo’s master brewer Omure was inspired by the low-temperature mash fermentation technique and sought to apply it to the production of shochu. After many trials, the Vacuum distillation resulted in a well-rounded shochu with a sweet aroma and refreshing taste resembling fruits.
